We will list the dishes you should eat by prefecture from northern Japan.

Hokkaido

Genghis Khan 
Genghis Khan is a yakiniku dish made with grilled sheep meat.

Sapporo Ramen  Among the many local ramen types across the country, the one that is extremely well-known is the “Sapporo Ramen,” which has a strong overall flavor and a large amount of oil.

There are also plenty of other seafood. Sea urchin, salmon roe, and crab are also recommended.

Pork, vegetables such as green onions, fish products such as kamaboko, and more than a dozen other ingredients are stir-fried with lard, and the flavor is seasoned with soup made from chicken bones, pork bones, etc. Add champon noodles to it and bring to a boil.
